1 onion, finely chopped
1 knob of butter
1 small pumpkin, peeled and diced
1 large or 2 small lemongrass stalks, without the stiff outer leaf, in fine rings
Pepper and salt
1 fresh red chili in thin rings
Finely chopped chives
Saute the onion in the butter. Add the pump cubes and finely chopped lemongrass and pour over the vegetable stock until the pumps are just covered. Bring to a boil and let it boil. Puree with the mixer and add a few tablespoons of beer to taste. If necessary, add a little more water or vegetable stock, and season with salt and pepper.
Pour the soup into plates. Sprinkle with chopped chives and chili rings. Drink a glass of the beer with it.
